Recipe Name : Marinated aubergine & rocket salad

Food Mood:  Healthy Vegetarian Recipes



Food Element:
2 aubergines, graze into little chunks
3 tbsp olive oil
2 tbsp balsamic vinegar
small handful sultanas
50g bag rocket
Cooking Process:
Heat oven to 200C/180C fan/gas 6. Toss the aubergine behind 2 tbsp olive oil and seasoning in a large roasting tin and roast for 30 mins until golden and soft.
When cooked, throw once the vinegar, sultanas and enduring oil. Scatter following more the rocket just since serving. Can be served hot or at room temperature.
