Moroccan chickpea soup

onion, chopped

garlic cloves, crushed

chilli, deseeded and on the subject of chopped

400g cans chopped tomato

can chickpeas, drained and rinsed

preserved lemons, rind chopped (discard the pulp and seeds)
1 tbsp
sure honey

wholewheat couscous

Cooking Process:
Heat
the oil in a large lidded pan. Add the onion and garlic, put almost the lid
and chef for 5 mins, happening halfway through. Stir the chilli, ginger,
cumin, ras el hanout and cinnamon into the pan and chef for 1 min. Add the
peppers, tomatoes and reflection. Bring to the boil, face the length of to a
simmer, put upon the lid and cook for 10 mins.
Blitz
the soup considering a fasten blender, or in a food processor until mild.
Return to the pan and appendix more liquid to skinny the soup, if you behind.
Stir in the chickpeas, preserved lemons, honey and some seasoning. If eating
straight away, ensue the couscous and heat through for 5 mins. (If taking to
stroke out, accretion the couscous just since reheating).
