Name: 5 A Day Couscous

Food Element:
1 medium courgette, scratch into little chunks
1 medium carrot, scratch into small chunks
1 medium red onion, clip into wedges
85g mushrooms, quartered
handful cherry tomatoes (nearly 8)
2 garlic cloves, peeled
1 tbsp olive oil
tsp paprika
tsp dried chilli flakes
2 bone-in chicken thighs, skin going concerning for the order of
50g couscous
small pack parsley or mint, a
propos speaking chopped
drizzle delectable chilli sauce (optional)

Cooking Process:
Heat the oven to 200C/180C lover/gas 6. Put the vegetables and garlic
upon a baking tray. Season ably, drizzle behind 1 tbsp olive oil and
combination until anything is coated.
Sprinkle the spices and some seasoning on elevation of the chicken
thighs, subsequently smear into the skin and flesh. Drizzle a little oil on
top of the skin and nestle the thighs surrounded by the veg. Roast in the
oven for 25-30 mins until the vegetables are starting to crisp and the
chicken is cooked through.

put the couscous in a bowl and just lid taking into account boiling water,
cover subsequent to cling film and permit for 5 mins.
