Recipe Name : Five-a-day tagine

Food Mood: Dairy-free lunch recipes



Food Element:
4 carrots, graze into chunks
4 little parsnips, or 3 large, scrape into chunks
3 red onions, scuff into wedges
2 red peppers, deseeded and scuff into chunks
2 tbsp olive oil
1 tsp each auditorium cumin, paprika, cinnamon and serene chilli powder
400g can chopped tomatoes
2 little handfuls soft dried apricots
2 tsp honey
Cooking Process:
Heat oven to 200C/follower 180C/gas 6. Scatter the veg greater than a couple of baking trays, drizzle following half the oil, season, later smear the oil back again the veg taking into account your hands to jacket. Roast for 30 mins until agonized and arrival to brown.
Meanwhile, fry the spices in the remaining oil for 1 min  they should sizzle and begin to smell aromatic. Tip in the tomatoes, apricots, honey and a can of water. Simmer for 5 mins until the sauce is slightly shortened and the apricots plump, subsequently whisk in the veg and some seasoning. Serve in the future couscous or jacket potatoes.
