4 carrots, graze into chunks
4 little parsnips, or 3 large, scrape into chunks
3 red onions, scuff into wedges
2 red peppers, deseeded and scuff into chunks
2 tbsp olive oil
1 tsp each auditorium cumin, paprika, cinnamon and serene chilli
powder
400g can chopped tomatoes
2 little handfuls soft dried apricots
2 tsp honey

Cooking Process:
Heat oven to 200C/follower 180C/gas 6. Scatter the veg greater than a
couple of baking trays, drizzle following half the oil, season, later smear

for 30 mins until agonized and arrival to brown.
Meanwhile, fry the spices in the remaining oil for 1 min they should sizzle and begin to smell
