1 tbsp olive oil
2 fat garlic cloves, 1
finely chopped, the new finely grated
1 tbsp finely chopped
ginger
1 red chilli, deseeded and
chopped
1 tbsp cumin seeds
1 aubergine (just just more
or less 350g), diced
150g pot plain bio-yogurt
250g pouch cooked
wholegrain pilau rice
2 large handfuls baby
spinach (about 75g)
1 tbsp chopped mint, gain a
few auxiliary leaves

Cooking Process:
Heat the oil in a non-fix
wok or deep saut pan and collect the chopped garlic, ginger, chilli and cumin
seeds. Cook, in the works, until the garlic has softened. Add the aubergine
and excite-fry for very roughly 1 min more, later cover the pan and agree it
steam-fry for about 7 mins, occurring all now and then until the aubergine is
tortured, but yet holds its concern. While it cooks, fused the yogurt back
the grated garlic and some seasoning.
Add the rice and spinach to
the pan and chef briefly to heat the rice and wilt the spinach. Stir in the
mint and assistance bearing in mind the garlicky yogurt scattered taking into
account a few supplementary mint leaves.
