Mediterranean chicken with roasted vegetables

250g baby tally potatoes,
thinly sliced
1 large courgette,
crossways sliced
1 red onion, clip into
wedges
1 orangey pepper, seeded
and graze into chunks
6 precise plum tomatoes,
halved
12 black olives, pitted
2 skinless boneless chicken
breast fillets, very roughly 150g/5oz each
3 tbsp olive oil
1 rounded tbsp green pesto

Cooking Process:
Preheat the oven to 200C/ Gas 6/lover
oven 180C. Spread the potatoes, courgette, onion, pepper and tomatoes in a
shallow roasting tin and scatter when more the olives. Season following salt
and harshly field black pepper.
Slash the flesh of each
chicken breast 3-4 time using a brilliant knife, later lay the chicken in the
region of summit of the vegetables.
Mix the olive oil and pesto
together until ably blended and spoon evenly on summit of the chicken. Cover
the tin once foil and chef for 30 minutes.
Remove the foil from the
tin. Return to the oven and chef for a count 10 minutes until the vegetables
are juicy and see appealing to eat and the chicken is cooked through (the
