courgettes, thickly sliced

aubergine, scratch into thick fingers

garlic cloves, chopped

peppers, deseeded and chopped into chunks

baking potatoes, peeled and condense into bite-size chunks

coriander seeds
4 tbsp
olive oil
400g/14oz can chopped tomatoes
400g/14oz can chickpeas, rinsed and drained

bunch coriander, almost chopped

Cooking Process:
Heat
oven to 220C/200C aficionada/gas 7. Tip all the vegetables into a large
roasting tin and throw gone the coriander seeds, most of the olive oil and
